With pumpkin coming back I cannot wait for all sorts of pumpkin themed desserts. Although I didn't make them the Pepperidge Farm cookies I tried were so phenomenal I can't wait to have more!! Until then here are some sweets I've been into lately! And yes I finally had one of Sonic's shakes before the summer ends.

Potato Chip Chicken
On my most recent shopping trip I couldn't help but be lured into trying the new Lays Cheesy Garlic Bread chips. I literally grabbed them last minute while in line. Delicious!!!! After chewing down a few (Or a few handfuls) I had a great idea; why not use the chips to coat my chicken? So I chopped up the chips (with my handy ninja) rolled chicken in it and voila delicious!!!!! I can't wait to try it again with different chips!! This is definitely a dinner worthy of seconds!
Ingredients:
2 boneless chicken breasts cut into small pieces
2 cups of chopped lays cheesy garlic chips (or whatever you choose)
1 egg beaten
1 tbsp milk
1 tbsp flour
Directions:
Mix the milk and egg together. Soak chicken in the mixture. In a separate bowl mix the flour and chopped chips. After the chicken has been soaked in the egg mixture roll in the chips and then place in a baking dish. Once all pieces of chicken have been coated in the chip crumbs pour the remaining crumbs over the chicken. Bake in the oven at 350 for 25 minutes (check to make sure chicken is done)

Perfect roast chicken
We love roast chicken for dinner and our default is beer can chicken. You can grill it or bake in the oven and it's as simple as placing the chicken on a beer can and adding some seasoning. However, sometimes we don't have beer on hand (imagine that) and have to go another route. We had this for dinner Sunday night and accompanied it with green beans and mashed potatoes. It was so delicious we both had seconds!!!
Ingredients:
1/2 tsp rosemary
1/2 tsp thyme
1/2 tsp garlic salt
1/2 tsp pepper
1/2 tsp parsley
4-6 basil leaves (we used some from our garden)
1/4 tsp sage
2 tbsp olive oil
Directions:
Wash and pat dry your chicken.
Cover it inside and out with olive oil.
Sprinkles seasoning equally all over chicken and feel free to season more if desired.
Bake at 350 about 20 mins a pound. Mine was a little over five pounds and I cooked it for an hour and 45 mins.
Serve with sides and enjoy!!!!!

Tuesday Treats
This week it's all about cupcakes!!! In the springs there has been a cupcake truck that makes its rounds through the city with all sorts of delicious cupcakes. This weekend was their last weekend as they are moving on to a new business venture. Of course we had to get some cupcakes! We tried pancakes and bacon, Boston cream and cookies and creme! Deliciousness! While except the pancakes and bacon since I don't like bacon. Hopefully there will be someone new delivering cupcakes for those times I just want one and don't feel like baking!

Calzones
With my new bread maker I keep trying new bread recipes, most recently though I've gotten into pizza grilling. With the summer heat, it's the perfect dinner. (Recipe coming soon) After our last pizza grilling we decided to try calzones next. The first time we did it, we made two, enormous calzones. The next time we learned our lesson and made four large ones instead. They were so delicious I can't wait to have them again!
Ingredients:
Pizza dough (I made mine in my bread maker)
Toppings: we did one BBQ chicken with onions mushrooms and cheese, one chicken Alfredo with pesto and cheese and one pizza sauce and pepperoni with cheese.
Parmesan cheese-grated
2 tbsp melted butter
Directions:
Once your dough is ready roll it out into two or four equal sections. Add sauce and toppings to one half. Fold in half and fold the edges together so toppings do not escape.
Place on a cookie sheet. Make a couple small cuts in the middle. Brush them with melted butter and if you desire sprinkle a little Parmesan cheese on top.
Cook at 350 for 25-30 mins or until crust turns brown. Enjoy!!!

Tuesday Treat: Chocolate Covered Strawberry Cupcakes
Now that we are full force into August every week a new grocery store has strawberries on sale. So came a new creation. Chocolate covered strawberry cupcakes! It's as simple as making chocolate covered strawberries, chocolate cupcakes, frosting them (I went with strawberry frosting but you could do chocolate or vanilla if you want) then placing the chocolate covered strawberry on top. It's like two desserts in one!! The verdict: delicious!
