In honor of the holiday weekend we did a lot of grilling. Kabobs were delicious and definitely something we will do a lot this summer. Although you can use any protein or veggies we used chicken and beef, peppers and onions. Yum!!!
Ingredients:
Chicken (we used chicken breast)
Beef
Peppers
Onions
Olive oil
Skewers
Directions:
Chop veggies into small pieces and meat into one inch cubes.
Arrange meat and veggies onto skewers.
Brush veggies (or everything) with just a tiny bit of olive oil.
Cook on the grill about ten to 15 mins for chicken and the steak to your preference.
I can't wait to try other combinations in the future!!!

Corn Two Ways
Corn kind of marks the start of summer. The grocery store had it on sale and we couldn't resist. We grilled all the corn and are looking for our favorite way to have summer corn!
The first way is Garlic Butter Corn
Ingredients:
Corn
Butter
Garlic salt
Tin foil
Shuck corn then brush melted butter (we like lots) and sprinkle with garlic salt. You can add pepper or other spices if you please. Wrap the corn in tin foil and place it on the grill turning occasionally for about 20 mins.
The second time around we left the husks on.
Soak the corn in water (with husks on) for 20 mins. Brush outside with olive oil and place on the grill. Cook for about 20-25 mins turning occasionally. Serve with butter and your favorite spices.
Either way the result is delicious sweet corn!!

Tuesday Treats
This week I got my fill of sweets but there's always next week to start planning ahead for.....

Moscato Bundt Cake
For those who like cooking with wine or wining while they cook this cake might be your new favorite. It is so incredibly moist and delicious. I originally found the recipe on the barefoot wines website a couple years ago. I don't even bother frosting the cake, I just sprinkle a little powdered sugar on top.
Ingredients:
1 box yellow cake mix
1 package instant vanilla pudding
1 tsp nutmeg
3/4 cup vegetable oil
3/4 cup moscato (I use barefoot)
4 eggs
Powdered sugar
Directions:
Combine all ingredients in a large bowl. Beat for four minutes. Pour into Bundt pan.
Bake at350 for 30-40 mins.
Let cool, remove from pan and sprinkle with powdered sugar. Bon appetit!
*Since I'm at a high altitude I used 1 cup of moscato

Peeps Cake
Remember those marshmallow peeps? Well I stuck some away and brought them out for the perfect sweet on a certain day! I saw on Pinterest where someone had chopped them up and put them into cake. Chopping was difficult since they stuck to the knife a bunch. My husband also really wanted cupcakes. I started out making cupcakes and the result was delicious but an ugly mess. I highly recommend only making cake. I used the rest of the batter to make a cake and wish I had stuck with it from the start. Although it was super delicious, it will probably not be a recipe I frequent mostly because of the difficulty with peeps.
Ingredients:
2 packages of peeps (bunnies work best)
1 box of white cake mix
Instructions:
Chop the peeps into tiny pieces. Set aside.
Make the white cake mix according to directions.
Pour a thin layer of batter into your cake pan (springform is suggested) make sure you spray and flour
Then add a layer of peeps
Add another layer of batter to cover the peeps. Then add the rest of the peeps.
Pour the rest of the batter on top. Cook according to directions.
Let cool, frost and enjoy!!

Chicken Marsala- Campbell's style
On a recent shopping trip we got a couple free samples of Campbell's new skillet sauces. We decided to give the chicken Marsala one a try. All you need is a pound of chicken breast and a little vegetable oil. I had leftover mushrooms from earlier this week so I sautéed them in some oil and Marsala sauce and added them at the end.
All you have to do is cook the chicken breast (cut up) in oil until brown on both sides. Then add the sauce (this is when I added the extra mushrooms) bring it all to a boil and then reduce heat and cook about five minutes until chicken is cooked through. I served mine with linguine. It was surprisingly delicious although I like my homemade sauce a little more. I will definitely consider this product again, especially if I'm in a hurry to make dinner.
