Tuesday treats

We went to an amusement park this past weekend and I indulged in funnel cake. It's been years since I had one and my it was so delicious! I also made some cupcakes for the husband's birthday. His request was yellow cupcakes with funfetti frosting. Simple enough but still satisfies the sweet tooth.

Mac and cheese- mom's way

This is my mom's recipe and it is comfort food at its finest. Yum!! I can never just have one helping.

Ingredients:
Box of elbow macaroni
1 8 oz block of sharp cheddar cheese
1 stick butter or margarine
2 cups milk
1 tsp salt
2 tbsp flour
Bread crumbs

Directions:
Boil water and cook macaroni according to directions. Drain water and set aside
In a skillet melt butter. Then add salt, flour and milk.
Once it starts to bubble stir in cheese and mix well. (I usually turn the stove down to low when I put the cheese in.)
In a 9x13 baking dish pour macaroni in and then dump cheese mixture over and mix together. I almost always add some Parmesan cheese or whatever I have laying around to make it extra cheesy. Top with breadcrumbs and cook for 30 mins at 350. Enjoy!!!!

Tuesday Treats

I have been looking into getting some fresh apples to start making apple desserts, then it's all pumpkin!!! I don't have much in terms of sweets from this week. I tried a new kind of ice cream that was a twist on cookie dough. It was sugar cookie dough instead of the chocolate chip kind. More yumminess to come soon.....

Tuesday Treats

Hopefully your week is off to a good start. Most of today I thought it was Wednesday so I'm glad I'm posting on Tuesday! My neighbor brought over a couple margarita pies and they were delicious, I'm definitely going to have to get the recipe after my husband licked his dish clean. Also I indulged in a pumpkin spice frappucino, it was dessert in a cup!!

Rice Krispies three ways

Although you can't beat traditional Rice Krispies it's fun to switch it up once in awhile. I recently had to make 100 Rice Krispies so I decided I would make a few different types. So easy and definitely something you could make last minute.

Ingredients:
Rice Krispies (6 cups each batch)
Margarine or butter (3tbsp each batch)
Mini Marshmallows (4 cups each batch)
Toppings: butterscotch chips, chocolate chips, Reese's pieces, whatever else you choose

Directions:
Melt butter in a medium pan on low heat. Add marshmallows and stir until melted.
Pour your Rice Krispies in a large mixing bowl. Once marshmallow/butter mix is melted pour over Rice Krispies along with whatever toppings you choose (I used about a cup) stir together until well mixed. Place into a well greased 9x13 pan or pan covered in wax paper. Spread evenly and let cool. Then enjoy!!!
*hint* to help spread mixture evenly I sprayed my palms with cooking spray and the mixture did not stick to my hands.

Happy Labor Day!!

I hope you are enjoying your day and although I made this cake for the 4th of July it's fitting for today to! I called it my fireworks cake but it's also patriotic.

Ingredients:
White cake mix or your favorite recipe.
Red and blue food coloring

Directions:
Set the oven to 350. Make your cake according to directions.
Separate about a cup of batter each into two bowls.
In one add red food coloring until well mixed and in the other do the same with blue food coloring.
Pour about half the original batter into greased pan. (I used a bundt pan)
With a fork spread a little red and blue batter in an outward motion trying not to get it on the edges.
Once you've used all the red and blue batter to make your "fireworks" cover it with the remaining white batter.
Cook until toothpick comes out clean, about 30 mins

Once cool make the frosting and frost.
To make the frosting mix 1/2 cup shortening and a stick of margarine. Add four cups powdered sugar and blend. Add 1tsp vanilla and 4 tbsp milk and mix. I separated the frosting and used food coloring again to decorate with red and blue. Then enjoy!!!
