Recently trying to beat the heat we made a batch of sangria to enjoy by the pool. It was the perfect refreshing beverage we will definitely be enjoying all summer.
Ingredients:
1.5L bottle of wine (we used a red)
1 bottle Triple Sec
1 2 liter bottle ginger ale
Tons of fruit!
We used blackberries, oranges, lemons and limes
Directions:
Pour the bottle of wine into a large jug or pitcher.
Add half (or whole if you're daring) the bottle of triple sec
Add the bottle of ginger ale
Chop fruit up and add in
Stir everything up until well mixed
Let sit in the fridge overnight and then enjoy over ice!

Tuesday Treats
This week is dedicated to cupcakes!! One of my absolute favorite desserts, have I mentioned I had them at my wedding in multiple flavors? We have a local truck that sells cupcakes and they are delicious, although its hard to eat more than one in a sitting. My husband and I cut them in half and shared. The tiramisu cupcake was my favorite! I've been looking at recipes to make my own and this has inspired me. Enjoy and try not to drool.

Oreo Creme Cupcakes
These cupcakes are so delicious, taste buds beware!!! They are easy to make and will quickly become a crowd favorite.
Ingredients:
1 package of Oreos
1 box of yellow cake mix (or your favorite cupcake recipe)
For the frosting:
1/2 cup shortening
1 stick margarine
4 cups powdered sugar
1tsp vanilla
4tbsp milk
Chocolate chips(optional)
Directions:
Preheat oven to 350. Separate Oreos. Place the side with Creme in the bottom of the cupcake liner.
Take the other halves and chop until crumbs. Mix cupcake mix (prepare as instructed) with Oreos.
In a separate bowl beat shortening and margarine. Add the powdered sugar, vanilla and milk and mix thoroughly. You can add more milk if you want to make it thinner.
Place one spoonful of batter in each cupcake hole (covering Oreo) then place a tablespoon of frosting in the middle, not touching the sides at all, on top of the batter. Cover the frosting completely with the remainder of the batter. Bake about 20 mins.
Let cool and then use the rest of the frosting to frost the tops. You can add crushed Oreos and chocolate chips on top if you want. Enjoy!!!

Spinach and Cheese Stuffed Shells
My mom always made awesome stuffed shells. I decided to try it for myself. I used spinach and also did red sauce for the husband and since I don't like red sauces, Alfredo for me. My husband gave them two thumbs up and literally ate every bite of leftovers.
Ingredients:
One box of jumbo shells
1 32oz container of Ricotta cheese
1bag of frozen chopped spinach
1 8oz block of mozzarella cheese
1 8oz block of Parmesan cheese
1 tbsp dried parsley
2 eggs beaten
Salt and pepper
Choice of sauce
Directions:
Boil shells until al dente. Drain water and set aside to cool
Mix eggs, ricotta. Parmesan salt and pepper and parsley together in a large bowl.
Add spinach and mix to combine.
Fill each shell with the mixture.
Place shells in a 9x13 baking dish. I added a little sauce on the bottom, placed the shells in then covered them in sauce.
Slice the mozzarella in 1/2 inch pieces and place on top of the stuffed shells.
Bake at 350 for 40-50 mins until the sauce is bubbly. Enjoy!!
